1. mix the water, the active yeast and a bit of sugar and wait 7-10 minutes until it forms a raft on top

2. whisk in the rest of the sugar, whisk eggs, milk and melted butter until combined and add salt and flour

3. mix until the dought is smooth and pulled away from the bowl

7. cover the dought and rest until for 1-2 hours until it doubles in size

8. preheat some oil until it reaches 350 degres

9. roll the dought on a floured surface and cut small squares or rectangles

10. fry the dought in the oil for 1-2 minutes until it comes brown

11. take out the beignets from the oil and add powdered sugar on
