Pralines

Ingredients for 15 servings

-1 cup white sugar

-1 cup brown sugar

-½ cup milk

-4 tablespoon butter 

-2 teaspoons vanilla extract

-1 1/2 cups pecans (toasted, coarsely chopped)

prep 25 min + let breath 30 min

RECIPE:

1)Prepare a baking sheet and put a baking paper on the top;

2)Mix the white and brown sugar with the milk in a medium saucepan over medium heat and stir until the sugar dissolves;

3)Insert a candy thermometer in the mix and wait until the thermometer reads 240 F;

4)Remove the pan from the heat and add the cubes of butter without stirring and allow the sugar mixture to sit for 1 minute;

5)Add the vanilla extract and pecans

6)Stir smoothly and constantly with a wooden spoon; the mix will begin to thicken and appear lighter in color and continue to stir until it starts to hold it is shape, it should still be easy to stir, but don’t overdo it, as pralines quickly go from fluid to rock-solid.

7)Drop small spoonfuls on the baking sheet. If the pralines starts to set in the saucepan, add a spoonful of boiling hot water and stir until it loosens.

8)When you have formed all the pralines, allow the pralines to fully set at room temperature for 30 minutes and keep the pralines in an airtight box at room temperature……Enjoy !!!
